In every Chinese people’s warm memories of the Spring Festival, there may be activities involving setting off firecrackers, receiving lucky money, visiting relatives, and watching the Spring Festival Gala, but to feel the true “taste” of the Chinese New Year, eating dumplings is something indispensable to us.Dumplings are shaped like a golden treasure that ancient Chinese used. People eat dumplings in the Spring Festival believing that they could “attract wealth and treasure“ . People love to wrap all kinds of ingredients with auspicious meanings into the fillings of the dumplings, sending their best wishes to the new year.
每個(gè)中國人關(guān)于春節(jié)的溫馨回憶里,也許有放鞭炮,有收壓歲錢,有走親戚,有看春晚,但年味里一定少不了餃子。餃子形如元寶,人們?cè)诖汗?jié)吃餃子取“招財(cái)進(jìn)寶”之意。餃子有餡,便于人們把各種吉祥的東西包到餡里,來寄托人們對(duì)新的一年的祈望。

In Jiaodong Peninsula, the eastern coastal region of Shandong Province, seafood dumplings are always the mainstay,irrespective of New Year occassion or other moments to honor the gods and guests. In 2013, Jiaodong Dumpling Food Custom was selected into the third batch of Shandong provincial intangible cultural heritage.
在山東省東部沿海地區(qū)的膠東半島,不管是大年三十的水餃,還是敬神待客的水餃,都以海鮮水餃為主。2013年,膠東餃子食俗入選山東省第三批非物質(zhì)文化遺產(chǎn)代表性項(xiàng)目保護(hù)名錄。
Seafood dumplings belong to Shandong cuisine. Fresh sea food such as cuttlefish, yellow croaker, Spanish mackerel, oyster, and shrimp are used as ingredients to make dumplings. The dumpling’s skin is thin, and the stuffing is white, smooth, and tender--that is why it has also been given the name “Fresh from the Sea“, featuring characteristics of delicate, delicious and healthy.
海鮮水餃屬于魯菜系,以墨魚、黃花魚、鲅魚、蠣蝦等新鮮海魚肉及其他各類海鮮等為食材,包成水餃。其皮薄餡白,滑嫩鮮香,遂有“鮮從海上來”之名,具有精致、美味、健康等特點(diǎn)。
Among them, Spanish mackerel dumplings and shrimp dumplings rank the top of the seafood dumplings, and are extremely popular with dumpling-lovers.Spanish mackerel dumplings are made with fresh Spanish mackerel. The fish meat is cut off along the spine to prepare for skinning and mincing, ginger and a few Chinese chives are also added into the stuffings.The dumpling skin should be soft in order for the boiled dumplings to be crystal thin and transparent --the fish balls inside present an inviting color of pure-whiteness and some greenness through the skin. With the tender fish meat and the fragrance of Chinese chives completely blending, the fresh mouthfeel and tempting aroma offer an endless aftertaste for taking just one bite of the dumpling.
其中,鲅魚水餃、蝦仁水餃?zhǔn)呛ur水餃中的佼佼者,深受人們青睞。鲅魚水餃?zhǔn)沁x用新鮮的鲅魚,順著脊椎把肉割下去皮,加入姜末剁碎和少許韭菜。餃子皮應(yīng)當(dāng)軟一點(diǎn),煮出來的餃子晶薄剔透,包著白綠相間的大魚丸子。魚肉的鮮美滑潤和韭菜的香味完全相融,咬一口鮮嫩清新、香而不膩,令人回味無窮。
