Linqu County, Weifang City, is located in the middle of Shandong Province. With four distinct seasons, the Mount Song in the county has abundant grasses, which makes it a natural pasture for goats to grow.The Whole Goat Feast in Linqu has a long history since its origin in the Qing Dynasty.In 2016, the craftsmanship of making Linqu Whole Goat Feast was included in the extended list of Shandong provincial intangible cultural heritage.
濰坊臨朐縣,位于魯中??h里的嵩山四季分明,百草豐茂,是山羊生長的天然牧場。臨朐全羊宴從清朝興起,歷史悠久。2016年,臨朐全羊宴制作工藝入圍山東省級非物質(zhì)文化遺產(chǎn)代表性項目名錄擴(kuò)展項目名錄。
The Whole Goat Feast selects castrated old Mount-song goats (over 3 years old and weighs 25 kg) as raw materials. Based on different parts of the goat body, it is paired with different seasonings and processed through different techniques in order to produce 127 dishes with excellent colors, aromas, and nutritional values.
全羊宴選取經(jīng)過閹割的嵩山老山羊(年齡3周歲以上,體重25公斤)為原材料,根本羊體的不同部位,配以不同的佐料,通過不同的制作工藝,炮制出色香味及營養(yǎng)價值各異的127菜肴。
The goats in Linqu are mostly black goats. Unlike goats from other places, they are raised free-range in the mountain areas.They eat green and pollution-free mountain herbs every day, including hundreds of Chinese herbal medicines such as ginseng, yucca and honeysuckle, and drink from mountain springs whichare clean and sweet.Just like naughty monkeys, black goats like to exercise. Except when grazing, they are always running and jumping on the mountain, climbing hills and cliffs. Thus the meat is particularly delicious and has medicinal value.
臨朐的羊多是黑山羊。它和別的地方的羊不一樣,散養(yǎng)在山區(qū)。平日里吃的是綠色、無污染的山間百草,其中有沙參、玉竹、金銀花等數(shù)百種中草藥,喝的是清冽甘甜的山泉。又因為黑山羊喜歡運(yùn)動,就像頑皮的猴子一樣,除了吃草就是在山上奔跑跳躍,爬坡登崖,所以肉也特別鮮香,具有藥用價值。
In terms of cooking techniques, the feast integrates frying, quick-frying, grilling, roasting, stewing, braising, simmering, and stir-frying, and every part of the goat body is a choice of ingredient. The well-cooked whole goat dishes are soft and tender, light and pleasant to the palate. They can be sour, spicy, crisp, tender, and mellow, but not smelly.
在制作方法上,集炸、熘、燒、烤、燉、燜、煨、炒于一身,把羊體的每個部位都納入了選料的范疇。制作的全羊菜品具有軟爛、清淡、味口宜中,以及酸、辣、脆、嫩、不腥不膻、鮮香味醇之特點。
